HAVANA ESPECIAL

Ingredients
  • 50ml Havana Club Especial
  • 50ml Fresh apple juice
  • 2 dashes of Angostura bitters
  • 2 teaspoons of white sugar
  • 1 twist of orange peel to garnish
Method
  1. In a rocks glass add the sugar and bitters and mix together
  2. Fill the glass with ice cubes and Havana Club Especial and then stir
  3. Add the apple juice and stir again
  4. Garnish with a twist of orange peel
Description

A blend of old and young rums that results in a rich, warm gold-coloured rum. Its character combines the lightness of white rums and the robust aroma of dark rums.

MONKEY AND GINGER

  • 50ml Monkey Shoulder
  • 125ml Ginger ale
  • Lime wedge
Method
  1. Add all ingredients to a highball over cubed ice
  2. Garnish with a wedge of lime
Description

A blend of 3 Speyside single malts, with vanilla, brown sugar and toffee notes. A ‘Monkey Shoulder’ is a temporary injury suffered by malt men when turning barley by hand.

SMOKY FRENCH MARTINI

  • 25ml Laphroaig 10YO
  • 25ml Chambord
  • 50ml Pineapple juice
  • 10ml Lemon juice
Method
  1. Pour all ingredients into a shaker tin over ice
  2. Fill with ice and shake hard for 8 seconds
  3. Strain into a chilled coupette
  4. Garnish with a fresh bramble
Description

Sparkling gold in colour. Islay peat smoke, full and earthy, tangy salt leaden air with an echo of sweetness at the end. Unforgettable.

GREY GOOSE ESPRESSO MARTINI

  • 50ml Grey Goose
  • 30ml Single origin espresso
  • 20ml Coffee liqueur
  • + Pinch of salt
  • 5ml Simple syrup
Method
  1. Add the spirits, salt and coffee flavours into a cocktail shaker over ice
  2. Shake briskly and strain into a cocktail glass
  3. Garnish with three coffee beans
Description

Silky and smooth; initially soft with a gentle sweetness that gradually envelops the mouth. Fresh and bright with a long, satisfying finish.

KETEL ONE - BLOODY MARY

  • 50ml Ketel One Vodka
  • 100ml Tomato juice
  • 10ml Lemon juice
  • 7 Drops of tabasco
  • 4 Dashes of Worscestershire Sauce
  • cubed ice
  • 2 Grinds of black pepper
  • 1 Pinch of salt
  • 1 Stick of celery
Method
  1. Rim your glass with cracked black pepper
  2. Fill a cocktail shaker with ice
  3. Pour in the ingredients, stirring until chilled
  4. Strain the liquid into a tall glass filled with ice
  5. Garnish with a stick of celery
Description

Small batch vodka, copper-pot distilled and filtered through natural charcoal. Generously coats the tongue with a coolness and a lively tingle on the finish.

  • 50ml Portobello Road Gin
  • 200ml Premium tonic water
  • Cucumber ribbons
  • Watermelon cubes
  • Spearmint
  • Green apple
Method
  1. Fill a glass with ice, add the gin and tonic slowly
  2. Use a vegetable peeler to cut long strips of cucumber
  3. Add 3 or 4 mint leaves and a similar number of watermelon cubes
  4. If you’re feeling adventurous, top the whole thing with a fanned apple “Parasol”
Description

A classic London Dry that has a very rich texture and the most gorgeous finish of liquorice and nutmeg.

  • 50ml 1800 Silver
  • 25ml Fresh lime juice
  • 15ml Agave nectar/syrup
  • 1 2cm piece fresh chilli
  • Cubed ice
Method
  1. Muddle chilli in Boston glass/tin
  2. Add ingredients
  3. Shake and double-strain over ice into glass
  4. Garnish with chilli slice or lime wheel

A premium Tequila with a smooth and interesting flavour. The blend of white tequilas produces hints of sweet fruit and pepper.

  • Fresh wedge of lime
Method
  1. Pour 50ml gin over ice into a highball glass
  2. Top with your desired amount of premium quality tonic
  3. Stir once and then garnish with a fresh wedge of unsqueezed lime
